<p>It’s very similar to the Cock a Leekie soup, except for the absence of prunes and barley. It’s also very easy and quick to prepare: getting the ingredients ready should only take 10 minutes, and cooking time is less than half an hour.<br />
<strong>The ingredients include:</strong></p>
<ul>
<li>2 teaspoons of olive oil</li>
<li>1 cup of sweet onion, finely chopped</li>
<li>The white and light green parts of 2 medium leeks, cut in half along its length and then sliced</li>
<li>1 medium-sized carrot, cut in half along its length and then sliced</li>
<li>1 celery stalk, sliced</li>
<li>8-ounce pack of cremini mushrooms, sliced</li>
<li>2 teaspoons of fresh thyme</li>
<li>1 tablespoon of fresh parsley, chopped</li>
<li>1½ cups of cooked skinless chicken breast, diced</li>
<li>6 cups of fat-free, low-sodium chicken broth</li>
<li>2 cups of water</li>
</ul>
<p>Once your ingredients are ready, heat the oil in a large stockpot or pan. Sauté the carrots, leeks, celery, and onions until they are all softened. Put in the mushrooms and cook them until they’re soft as well. Sprinkle the herbs and cook for about a minute; by this time it should be quite aromatic.</p>
<p>Add the chicken as you stir, and then add the chicken broth and the water. Bring it all to a boil, and then let it simmer for about 15 minutes. You now have enough chicken and leek soup for 8 to 10 servings!</p>
